I would like to make muffin-size quiches or frittata type dishes to have on hand for my kids for weekday breakfasts. Ideally they would be freezable, microwaveable, and appealing to kids.
Does anyone have a recipe? Thanks! |
| Look on the weight watchers site for mini zucchini quiches. They are really good and you can't taste the zucchini. |

You can use any frittata recipe just modify the time for baking in mini muffin tin:

My "recipe" could hardly be called on.
Grease or line muffin pans. Or hear oven to 375. Whisk together eggs (I use 1 whole egg and 1 egg white per "muffin" but I like lots of stuff in mine. You could also use 2 whole eggs), a splash of milk, and seasoning (I use Herbamare, pepper, some Dijon mustard and random herbs and spices). Spoon eggs into muffin pan. Top with desired "stuff". I use whatever I have on hand that week- broccoli, peppers, mushrooms, spinach, zucchini, etc.. Top with a little grated cheese if desired. Stick in oven for 15 ish minutes. Eat and enjoy. |
