Skinless Chicken Legs - ???

My son actually has fond memories of his preschool lunches. The place that made the food will not give out recipes

One he says he wants again is chicken leg. But when I tried to bake some, he said he thought it didn't have skin and he also sort of complained it was too fatty. He also said they were bigger (but he was smaller at the time). Any ideas of how to make a skinless chicken leg? Do I bake and then take the skin off? Or skin it and then cook how? Or anyone just have a good recipe that involve chicken legs that I could give a try. He rarely willingly asks for a new food, so I'd like to take advantage.

Take off the skin. Rub with olive oil and at least salt and pepper, if not some paprika or mustard powder or curry or chili powder or sage and cook at 425 for 10-15 minutes, turning once.

Also if you cook it on a rack in the oven the bottom won't be slimy.

Maybe it was a chicken leg with a thigh attached? DD used to get those at preschool (did your son go to BH?) and I went to a lunch where they served this. It appeared to be baked with just salt and pepper and maybe olive oil. It looked so gross but the kids LOVED it.

Yes de-skin them! I think it's gross to leave the skin on.

This is Op. thanks! He did not go to BH. Maybe the thigh was attached.
