Millions of peaches, peaches for me

I took my kids to a pick your own farm yesterday, and ended up with a 1/2 bushel box of peaches. Besides peach cobbler (which I'm already planning on making), what are you favorite peach recipes?

I make a peach jam with some amaretto that is awesome.

We have a peach tree, so when I'm drowning in peaches, I freeze them. Then I can pull out a bag in mid winter and have fresh peach pie or peach cobbler.

I like to freeze peaches. However, I can eat an obscene amount of peaches this time of year.

roasted peaches with raspberries.

Cut them in half, roll them in a mix of ginger and sugar to taste, put about 1/3 cup water in the bottom of an oven safe dish and roast them until they give up the juice and form a syrup. Throw raspberries in for 5 minutes. Eat with ice cream or just heavy cream.
