Yes, I haven't made them a lot but essentially I make latkes (and I'm not Jewish). Shred potatos, a touch of shredded onion, egg and a little potato starch for binding, then seasoning of choice. Mix in a bowl, then make little balls and flatten into discs. I pan fry them in about 1/4" layer of oil in a large skillet until golden, flip, cook second side, and plate on paper towels to soak up some of the oil. Alternatively, you can bake them on a cookie sheet with a wire rack and spray them with cooking spray for a lighter oven baked version but the pan fried ones taste better. |
Maybe potato pancakes with hash brown and mashed mixed together for that tater tot consistency? |

| I've made potato pancakes too with shredded potatoes. They are good. You could make them smaller for tater tots. |
