| I'm really short on time so need suggestions that are really quick and easy. Also, any low carb frozen meals that you buy at the grocery store frozen section that would be good for someone with Gestational diabetes to eat would be appreciated also. Thanks! |

For breakfast, I normally had a couple of hard boiled eggs and a piece of fruit. I hard boiled a dozen eggs at a time, so very quick and easy to pull a couple from the fridge. Some people swear by oatmeal, but it always spiked my blood sugar numbers.
Lunch - half a sandwich (one slice of whole-grain bread) piled high with meat, cheese and lettuce. Side of veggies and hummus. Or a salad with a scoop of chicken salad or tuna. Dinner - I usually measured out my allotment of carbs in brown rice or pasta (cooked rice once on the weekend, enough to last all week), then added a quick-cooking protein (chicken cutlets, salmon) and vegetable (broccoli, salad, etc). That was easier for me than mixed dishes like casseroles, where it was hard to measure the carbs. Snacks - mixed nuts and Craisins, sliced cheese with a couple of crackers. Hang in there.... | I had hard boiled eggs or cheese sticks for breakfast. Lunch and dinner were usually baked chicken in a crockpot with sauce (lemon chicken, Asians sauces), or mexican food (tortillas with guac, veggies), etc. Nothing I did lowered my numbers, so I just tried to avoid sweets and lots of breads, and focus on healthy whole foods. I'm the first PP. Sauces were terrible for me, even the supposedly low-sugar ones always spiked my numbers. I used spices and herbs instead.
One thing that did really help was a short walk right after eating. Even 5-10 minutes of walking helped bring my blood glucose levels dramatically down. |
