making challah, ran out of eggs

Anonymous
Crap... challah recipe calls for 2 eggs (plus one for the glaze). Only have one egg left. What would you have done?

I replaced the egg with 1/4 cup olive oil. Bad move?

It's rising now - assuming it rises without a problem, what do I glaze it with to brown? Oil? I can't use milk (or dairy).

Baby is napping and toddler is crazy - can't run out to get more!

Your bread might be heavy. I'd skip the glaze altogether since there's additional oil in there. You can still glaze it if you want with a little oil, I think. This will make the crust a bit soft. The worst that will happen is that it won't be as good as normal.

I would probably just have skipped the second egg, or added a little more water and some potato starch or something. I keep Ener-G egg replacer in the house (I don't keep kosher, and can't recall of the top of my head if it's kosher or not).

This is where you go to a neighbor and ask for a couple of eggs. But not me - I ran out of eggs yesterday.
