| Google Giada de laurentiis' sundried tomato pesto recipe. Mix that with your cooked sliced chicken and your pasta. Makes amazing leftovers too. |

If you are cooking for kids, roast or bake the chicken, shred it, and use it for this recipe. My kids love it.

Grill and slice the chicken. Cook pasta, toss with a cream sauce and peas, top with the chicken.
-or- Poach and shred the chicken. Combine the cooked pasta, chicken, EVOO, halved cherry tomatoes, lemon zest, and shredded basil. |

I do something like this but more Mediterranean. Olives, capers, artichokes, sundried tomatoes, feta, pesto, roasted red pepper, whatever you've got in your pantry. |

Lemon, wine, capers for chicken piccata.
Cream, butter, Parm for chicken Alfredo. Italian dressing, veggies and chicken and pasta as a cold pasta salad. Spaghetti sauce and mozzarella for chicken Parm. Bread crumbs and Parmesan to bread the chicken and just do butter and Parm in the pasta. Easy pasta and cutlets. |
| Wash and dredge chicken in flour. Shake off excess flour. Dredge in a scrambled egg, then dip in crushed whole wheat crackers. Get a baking sheet with an edge, put a wire rack on it, place the chicken on it and spray with cooking spray, olive oil cooking spray or olive oil. Only need a little. Bake the chicken for oven fried chicken. For the last few minutes, put slices of provolone cheese and melt. Serve with the pasta and tomato sauce of your choice for a homemade chicken parmesan that's a little healthier than most. If you want, you can also cut the chicken into pieces, do the same and serve them as homemade chicken nuggets. |
