Swim Teacher diet?

Please Help! I just started a part time job as a swim instructor, and I'm hungry ALL THE TIME. I'm in the water 17 hours a week, between 3-6 hours a day, 4x a week. I also swim laps for 30-45 minutes 1-3 times a week. I'm not swimming laps when I'm teaching, but I'm moving, lifting, throwing, walking back and forth quite a bit, not to mention demonstrating strokes to older kids. I'm 5'10" and 180 pounds, if that helps. I'd like to lose 5-15 pounds to take weight off my bad knees, but right now my priority is getting the right nutrients in my body with all this pool time. All the swimmer's suggested diets are for people who are swimming laps, so I'm not sure they're right for me. Any advice would be greatly appreciated.

Sorry, but why do you need a separate diet b/c you are a swim teacher? Aren't you really asking how many calories you should consume to lose 1-2 lbs/week at your activity level (which is really the case, no?). Otherwise, I'm not sure your question makes sense.

I'm wondering if there are specific foods I should be eating---I know I'm losing electrolytes in the water, but should I also be focusing on carbs since I'm using a lot of energy?
