Sous Vide Cooking

We got a sous vide machine a few months ago. Love it. Chicken and beef is amazing. Love eggs. Buy baldwins sous vide at home book.

Anova is the best. I looked at all the major ones including Sous Vide Supreme. It works well, is high quality and you can attached it to nearly any pot.

Also, get a vacuum sealer. We bought a food saver at costco which works very well.

It cooks meat perfectly.

Avoid it completely. Plastics leach into the food (see, e.g., http://www.ncbi.nlm.nih.gov/pmc/articles/PMC3222987/) and that is so not worth it to me.

I just braise or roast meats on the bone. Excellent succulence and no harmful estrogenic compounds or cancer risk.

That is why you use heat safe plastic.

Heat safe plastic isn't possible. Agree that it's just not worth the risk of plastic leaching into food.
