Spaghetti squash with your favorite pasta sauce. Mashed cauliflower (Google recipes - good ones usually have cream cheese). Cheesecake with a nut crust made with Splenda. Crust less quiches.
Low carb without fats is hard, boring, and doesn't work as well. Why are you steaming vegetables instead of sautéing them? Use mustard to thicken dressings on salad. Add some bacon to the green beans, etc. |

He doesn't stop because it is the only thing that has worked this well. He is well aware that a life of useless, nutrition-less carbs is not in his future. He wants to get to goal, he's lost 50 already. |
If your DH needs to lose this much weight, and has struggled with it for awhile as you imply, then he has serious health risks. This is not a safe way, nor permanent way, to be losing weight. He is at risk of being nutrient deficient in many areas; they are not all "useless carbs." Please tell me that he has at least consulted a qualified, credential registered dietitian about this so-called miracle diet he has discovered? |
Oh, for heaven's sake, don't act like the OP's husband has singlehandedly invented the ketogenic diet. It's a good deal healthier than the low-fat high-carb diets that dietitians were peddling for so long. Ask any diabetic. |

I like the nom nom paleo 'damn fine chicken drumsticks' -- they are delicious and easy.
Also check out the 'against all grain' buffalo chicken egg muffins - I use just leftover chicken, makes it very easy. |

| I do a low carb diet, and get plenty of carbs. I just stay away from the white bread, crackers, bagels, etc. I made emily bites lettuce wraps last week, and they were delicious. I am going to make budget bytes curried chick peas with spinach tomorrow, and I will serve it with 1/4 cup brown rice. I have made spaghetti and meatballs, and lasagne using zucchini. I also love stuffed acorn squash. I would check out some online cookbooks. There are so many recipes, I can't imagine getting bored! I also eat plenty of fruit and berries. |
