Mashed Cauliflowers:
4 C cauliflower florets 2T butter or olive oil sea salt ground pepper 2T finely chopped chives or scallions boil cauliflower until tender, about 5 minutes drain mash by hand or in food processor with butter, salt and pepper. season with salt and pepper, garnish with chives. |
And then add a cup of cream cheese or cheddar so that it will be yummy. |

Yes! Thank you so much for articulating this. I am the same way. "Protein" does not fill me up in the slightest. I'm just as starving after a snack of almonds or an egg or some cheese as I am with "useless carbs". Give me a bowl of whole grain fibery cereal anyday as a satisfying snack. That's what works for me too. I weigh 108 by the way. |
+1 For dessert, I like date, nut, and coconut balls and Mark Sisson has a nice paleo pumpkin pie recipe with a walnut crust, really yummy! For entrees, I like taco salad, rotisserie chicken with roasted squash, steak with a spinach strawberry and goat cheese salad, and any Indian curry - sub rice with grilled eggplant if it's a tomato base curry and squash if it's coconut milk based For appetizers, carrot ginger soup is my fav For drinks, you can do a lassi really easily at home |

Cauliflower rice has become my go-to base for SO MANY meals lately. I use it instead or rice or pasta with turkey taco meat, grilled chicken or chicken stir-fry and even with eggs.
