Ganache is easy to make. The ratio of chocolate to cream determines the contency after it cools.
This makes a lots(6 cups) 3 cups of heavy cream 3 oz of corn syrup 3 oz of unsalted butter 2 pounds of dark sweet chocolate, chopped fine 1) place cream, corn syrup, and butter in a saucepan and bring the mixture to a boil. 2) remove from heat and add chopped chocolate, stirring constantly until the chocolate is completely melted and the mixture is homogenous. This recipe is for a soft ganache...one used for glazing. |

| I don't recall ever seeing it in a store. I think the version in the Epicurious double chocolate layer cake recipe may be even simpler than the one the PP posted, and it's really good. |

You don't need corn syrup. Chocolate and heavy cream are enough:

| At it's simplest ganache is really just microwaved chocolate chips with a small amount of cream whisked in. It's applied when a thick liquid (dipped, poured) and it dries into a frosting. You can not spread it. So if you bought it premise you'd still need to heat and apply it. I think this is why I've never seen it pre made; the "scratch" approach is basically the same thing. |
