| I know this thread comes up every summer, but I am looking for fresh inspiration. We leave for the beach in a week and we rent a house so we have a full kitchen although it is unreliable how well it is stocked with cooking equipment - there is usually a grill but a smallish one (so can be hard to grill for a big group of people on it without grilling in multiple shifts). In total there will be 10 of us, mostly adults and teens and a couple of young kids (mine). I'd love some new dinner ideas as I am responsible for feeding the group a few nights. I am open to any ideas although I'd love fresh and healthy ideas, and bonus if I can prepare at least one meal at home and bring it frozen and reheat. Thanks for ideas. |

Pasta with various sauces/add-ins has always worked well for us (can use jarred sauce or prep and freeze sauces in advance). It's easy to adapt for dietary constraints and most people eat it. Bag of salad and a baguette with it. we often do this on arrival day.
Our rental houses have always had a crockpot, so something like pulled pork in the crockpot could work. Low effort, you can let it cook while you're in and out at the beach all day and then just throw together coleslaw or some other sides and buy some rolls. I always like to do a seafood boil and take advantage of being at the beach. You can't prep this at home obviously, but it's easy! If you're ok with eating soup in hot weather, I'd make a big batch of soup at home and bring it frozen. Then it's a snap to reheat and serve with some fresh bread. We try to do soups in summer that use seasonal vegetables-green corn soup (also hoes great with quesadillas), cream of cauliflower, bean soup with kale, etc. |

Make your own tacos/fajitas bar (homemade guac, good salsa, grilled chix or shrimp or portabellas, peppers, cheese, etc.)
Baked potato bar with all kinds of fixins (cheese, bacon, mushrooms, chives, SC, etc.) Shrimp & Grits Pasta Flank Steak Pulled pork (crockpot travels well) |

I would make at least two trays of food at home and bring them with you.
Lasagna, shells, chicken and broc. casserole, baked mexican casserole, etc. |
| Bring a tray of cooked chicken, warm and pour bbq sauce, and eat on rolls with a salad. |
| I love buffalo chicken, so how about bring cooked chicken and make buffalo chicken pizza with the pillsbury crust. Or maybe make your own pizzas? |

This is a classic, but a good baked ziti, frozen in advance and cooke the first night, will serve you well.
you could also do meatballs, and have a double batch, and extra sauce, and another night with whatever is leftover also have meatball subs. |

Grilled or broiled fish one night, fish tacos the next night.
Definitely +1 for shrimp boil. |

You can also make fish/corn chowder with your grilled fish or seafood boil leftovers.
Seafood boil leftovers also work in frittatas or breakfast hash. Steak or fajita leftovers make good sandwiches the next day. |
