What is this salad missing?

DH and I have recently begun having salads for dinner once a week. I've followed a few recipes and tried winging it once or twice, with decent results. Tonight is another "winging it" night, and it's the first time I am not including a meat for protein. Here's what is going into the salad:

Spinach
Chick peas (a lot! For protein, plus we love them!)
Roasted beets
Marinated artichoke hearts
Carrots
Tomatoes
Goat Cheese
Homemade balsamic vinaigrette

Does this sound good? Do you think there is anything I should add, anything that's missing? I have some roasted red peppers I was considering adding to the mix. Yea or nay? I will be serving parmesan garlic toasts on the side.

You need something sweet (fruit), something crunchy (nuts, seeds, even croutons), something salty (cheese), something bitter (arugula), some protein and an extra veggie or two. And a vinegarette. Done.

Salty can be olives or artichokes whatever.

I'd want more crunch. Seeds or nuts.

It sounds delicious to me. If you're concerned about satiety, I'd add a Poached egg each and/or Avocado.

Agreed. Made a similar salad tonight and ours had toasted almonds.

It's a few too many ingredients for me, or I would swap the artichokes for a little red onion

Do you put poached eggs in/on your salad? I love poached eggs, and I love salad, but this never crossed my mind. It sounds intriguing, maybe particularly good with spinach?

I'm hard pressed to think of anything poached egg doesn't go on. rice, spinach, pasta....
Or soft/hard boiled egg would work, too if you don't like runny yolk on your salad.

OK, I am totally trying this. I'm picturing a warm spinach salad with poached egg, crumbled bacon, roasted red pepper and goat cheese. Does that sound good to anyone else?

Ditch the carrots and tomatoes. They don't go. Maybe add roasted broccoli?

Our favorite with balsamic is - spinach, red pepper, white cheddar cheese, green apple, carrot, and leftover chicken or turkey/ham lunch meat.

My fave is - spinach, tofu, steamed broccoli, beets, green apples, white cheddar, and Dijon vinaigrette.
