I'm hosting a brunch and just remembered one of the guests of honor has a dairy intolerance, and need to shake up my dairy-heavy menu.
I originally planned to make a baked frech toast and some quiches, plus fruit. Any ideas on something I could add to compliment that menu? Or a replacement for the quiche that would be dairy free? My other idea is to do more lunch-type foods, with asian-inspired rice salad and I'm not sure what else. It's a vegetarian heavy crowd, so I'd like to stay meat-free or at least meat-lite. I'd also like to be able to do most of the preparation ahead of time. |
| Make the French toast with almond milk, that's an easy substitution. Breakfast potatoes without butter, just use olive oil instead. When I make frittata, I don't usually use milk. |

| You could have a waffle bar....just make the waffle batter with coconut or almond milk. |
I made that three years ago and never knew what I did wrong, because it was not good. It looked so fabulous! Muffins wouldn't replace the quiche, but they're pretty easy to make with vegetable oil, and you could get any number of dairy-free spreads or jams. I might just be craving bran muffins right now... |
| +1 on making the baked French toast with almond milk. I just made that for a brunch and it was a huge hit. I'm assuming the guest of honor is okay with eggs if the French toast is fine? If so, I'd do a veggie frittata instead of quiche - easy to make that without dairy. Some roasted potatoes and a big fruit salad - done! |

| OP here - don't know why I didn't think of making the French toast with some other kind of milk. Great idea! Will almond milk make it sweeter? Would you do almond milk with pecan/blueberry French toast or is that weird? |
Usually bagels are with cream cheese or butter--not exactly dairy free. |
| Mix rice flour with vanilla soy milk. Vanilla soy milk is on the sweeter side but you can add a little more sugar. Make pancakes with this. They come out real good and serve with maple or strawberry syrup. |

I've found that quinoa milk or hemp milk work very well in cooking/baking applications. They have higher fat content and richer texture than most other non-dairy milks. For waffles, crepes, or quiche, I'd use one of those.
For French toast, I'm not sure. I've used quinoa or hemp milk and it's come out fine, but PP really liked almond--that may give it a good flavor; I haven't tried it. Experiment; I'm sure any one of them is fine (but I wouldn't go with something lightweight like rice milk). |
| Also, this may not fit your menu, but in bagel situations, as a non-dairy substitute for cream cheese, I've spread avocado on and then topped with smoked salmon and scallions. It's really good. |
| Hemp is pretty neutral, so hemp milk with pecan/blueberry French toast should be fine. |
