I underestimated how many clementines we had left (from last week) and bought another big container of them over the weekend. Now we have more clementines than I know what to do with...
Any recipes, any suggestions for using these up? Help! |

| chop a few up, add to cake batter, bake as usual. |
| Peel 5 clementines and grind in a mixer. Put less than 1/4 cup water and keep grinding. Drink as orange juice with pulp. Healthy and has lot of fiber. |

I was going to say exactly this. If you don't have a juicer, get a $1 plastic juicer from the dollar store. Drink up! |

| Clementine cake. You can freeze the pulp in batches for later cakes. |
| Put it in red cabbage slaw. Slice some up and mix with purple cabbage, red or green onion, feta, pumpkin seeds and drizzle some oil and vinegar. |

1. Peel and slice, then scatter on a plate with thinly sliced red onions and one of the following: capers, olives, or chopped cilantro. Drizzle with olive oil and a little salt.
2. Chop into rough pieces, and put into black beans and rice with chopped scallions. |
