| I do roast chicken once a week. Butterfly it and take out the breastbone; rain kosher salt over the skin; place in roasting pan directly over halved baby potatoes; 450 degrees for 50-60 mins depending on size. Delicious; 10 mins prep time, if that -- and the wingtips crisp up so beautifully I usually eat both the second the bird comes out of the oven. |
And I also remove the skin, before cooking. Cooking chicken with skin on it is a big no-no in my kitchen.

My mother taught me all about cooking chicken at an early age. "Thank the Lord"
Cleaning, cutting, cooking. I've passed it on to my children as well as grands. Removing hair/ feathers from chickens was a basic rule as a cook. If I didn't have a gas stove I would use, and still do a "CANDLE"!!! I raise chickens so I know all about their Feathers and Hairs.... I do not eat chicken in restaurants unless, I have a cigarette lighter... Food for thought.... ENJOY... I'm in my 70's |
