Dinner menu this week.....

I've seen something similar on here before, but I'm in need of some inspiration. What's your menu this week? Here's mine...
M: Pot Roast (in the crock pot)
T: Vegetable beef soup (with leftover beef, carrots, potatoes from pot roast)
W: Pasta w/ alfredo sauce, chicken, and sundried tomatoes
R: Tomato tortellini soup w/ crusty bread
F: Crock pot red beans and barley.
Weekend: LEFTOVERS!!!!!

Crock pot red beans? Have you made that before? Apparently red beans need to be boiled to get rid of some toxin.

Do you mind posting your Wednesday recipe? Sounds good.

Ummm.... nope, never made it. Pintrest find. Maybe I need to look into that. Just had some barley I needed to use.
The pasta is super easy. I bake chicken breasts sometime during the week when I have a minute. Make bowtie pasta. Chop up the chicken. Use jarred alfredo. Chop up sundried tomatoes and add a bunch of bleu cheese. Mix it all together and serve. The bleu cheese makes the jarred alfredo sauce taste MUCH better.

So far we have had spaghetti, beef stew, and roasted chicken. Tomorrow we will have soup and pierogies. Also had quiche.

M- Santa Fe crock pot chicken w/brown rice
T- spaghetti squash and cheese bake, salmon
W- shrimp "fried rice" (quinoa)
Th- leftovers
F- take out

M- chow mein with egg, red pepper, sugar snap peas
T- split pea and ham soup, bread and butter
W- meatloaf, roasted brussels sprouts and potatoes
R- sushi dinner out
F- leftover soup or meatloaf
weekend - more leftover soup and meatloaf

I'm amazed by the number of people on this board that cook a new meal every weeknight. I always try to have leftovers when I make dinner so that I only have to cook every other night.

I made spaghetti and meatballs tonight and we have enough to eat it every night through Sunday! I will most likely freeze half of it in the morning.

T- beef & fish tacos
W- turkey chili
Th- Vegetable soup & grilled cheese
Fri- baby back ribs
Sat - take out/left overs
Sun- ??

I could have posted this. Plus I use leftovers to make new meals. (I have lots of spaghetti sauce dishes....)

I wish I could have leftovers, but we have four kids with big appetites! Cooking for six = only enough left as a treat for the dog.

This week we've had beef stew in the slow cooker, fettucine alfredo with shrimp scampi, stir fry chicken with rice and veggies, and a ground beef & noodle bake.
