Vegetable-heavy main dishes

I need some inspiration for main dishes with lots of vegetables that an be prepared in less than a half hour, or reheat well and quickly. Recipes don't need to be vegetarian.

Once again I'm resolving to get more vegetables in our diet this year.

We are vegetarian, but eat plenty of pasta, Mexican, etc--not always veggie-heavy. But I am all about cooking easy.

For lots of veggies, I like
Ratatouille
Roasted veggies tossed with a grain (quinoa, farro)
Chickpea or black bean salad--tossed with lots of fresh veggies

These are things my kids will eat, usually.

Lots of Indian dishes actually. Or Thai or Chinese stir fries. Any recipe in that vein can be amped up by reducing the meat and increasing the variety/amount if veggies.

I also find you can add chopped spinach to many sauces without affecting the taste. We also add lots of greens to any soups we make.

Check out Nikki Dinki's site. She was on Next Food Network Star. While she didn't win, she made a big impact with her "meat on the side" philosophy. We like her recipes.

We are big fans of lentil tacos. Don't miss the meat, plenty of protein, good texture and flavor, make great leftovers and the lentils freeze well.

What veggies do you include in the dish? I don't really care if the recipes are meat or vegetarian, I just want to make sure that we are eating multiple servings of vegetables at dinner.

Well, I know the lentils are legumes- but they're full of fiber, so I count those. Then I add onion, salsa, lettuce, tomato. You could also add bell peppers, corn, black beans.

Here are a few we like:

1) Put a cut up cabbage, a bunch of carrots, and onions in a pot with some smoked sausage and a little water and steam it.

2) Parsnips and carrots cut into french fry shaped strips, tossed with a little olive oil and rosemary or thyme, and roasted. Makes a great substitute for fries and a way to add a second vegetable, alongside something green.

3) Fried "rice" with 1/2 the rice substituted for shaved cauliflower, and a ton of frozen mixed veggies added in.

I make a simple stew during summer, when fresh produce is good.
Cut up a couple of onions, a few plum tomatoes, some new potatoes, a couple of peppers (I use different colored ones), a zucchini, a yellow squash and add a few sprigs of thyme. Drizzle with good olive oil, place uncovered in a Dutch oven, in the oven at 450F. Cover after 15 min and cook till the vegetables are done. Season with salt and pepper to taste.

I like to make something like a beef stew, that's already got lots of vegetables, using something like rutabaga instead of potatoes, and serve it over a pile of steamed cauliflower.

I also like to make brussel sprouts with a little bacon and balsamic, and serve it with a poached egg on top, and a fresh fruit salad.
