s/o: The Leftovers

What are your favorite creative repurposed leftovers? Which ones didn't work?

I'm partial to stuffing balls: roll the stuffing meatball size, then pan-fry like meatballs to give them a crust.
(If I had a deep-fryer, I'd make croquettes. Last year I made stuffing fritters, which were almost as good.)

Last year we made a turkey and spinach curry from a ny times recipe. So good we're making it again tonight.

Tomorrow, turkey pot pie. Later in the week a white chili. We also always make a huge pot of stock and use it for various soups (we freeze whatever we don't use right away).

Turkey paninis dipped in gravy are a big hit here. Ive also used random leftovers to create a turkey day omelette which was surprisingly good.

The traditional thanksgiving sandwhich. Stuffing, mashed potato, turkey, cranberry sauce in between 2 pieces of toast

I have made green enchiladas with the leftover meat. They go over wellbecause they are such a different fflavor after days of thanksgiving.

Made a turkey shepherd's pie this year with the leftovers. The glazed carrots really made it...super easy recipe. Delish!

Nothing better. No other leftover dish is even a consideration for me. Except I personally would skip the potatoes….and with the carcass, soup!

Made this tonight! Even made the crust, only takes 5 min to throw together

Easy pie crust
2 1/1 cups flour
1 cup butter cut into pieces and popped in the freezer for 10 min
1/2 cup water with lots if ice

Pulse butter and flour in food processer till mixed (30 sec or so)
Slowly add water till forms dough
Chill for 10 min in fridge before rolling out
