So, I am motivated to make the recipe the WaPo listed as "World's Best Lasagna (Tweaked)" .
But, it specifies dried lasagne pasta each 2.5-3 inches wide and 13 inches long. I've measured what I have on hand, and it is only ~10.5 inches long. I've never seen longer lasagne at my usual stores (Giant, Wegman's , Food Lion). Where do I need to go to buy this extra long pasta??!! Thanks in advance. |
| I wouldn't worry about it and just use what's available. You could check at a gourmet or Italian specialty store. |

| I took a quick look at the recipe and there is no particular requirement for the size (although they are explicit about it). What they want is pasta that will completely cover the sauce on the bottom. The point is that you want the pasta to go from edge to edge in your lasagna pan. They also tell you to overlap the pasta because they don't want the layers (sauce and cheese) to intermingle during the cooking. So, you can use the regular lasagna, and cut or break pieces to overlap and fill from edge to edge in the pan. You don't need to go out of your way to buy special pasta (unless you want a specialty pasta for some other reason). |

| You really only need to be able to cover the size of the dish for each layer. Also, it's easier to buy the fresh pasta sheets (available at Whole Foods and other stores). You simply cut to the size you need and no need to cook the pasta ahead of time - it will cook in the oven. If you do buy dried pasta buy the "no-boil" kind. However, you cannot cut this kind to fit the pan so you need to know exactly the size of pan to be able to fit them/ Frankly, the fresh pasta sheets are easier and taste much better! |
