| Every once in a while, I like to make eggs benedict for overnight guests as a special event. I like doing it but the whole process is so complicated, I feel like I need a sous chef (and I often actually designate a guest or DH as said sous chef)! I poach the eggs the traditional way, sliding them into a frying pan of vinegar and boiling water. If it weren't for the egg poaching issue, the whole thing would not be so over-the-top difficult. You can only do them about three at a time and then you have to reboil the water. Tell me you can really poach an egg in a more efficient way! |

Get an egg poacher. They work like a double boiler. You put one on a pot of boiling water and it will poach 4 eggs at a time, then you take them out and put in 4 more eggs, but you don't have to reboil the water because the water stays boiling underneath.
You can also get ones that work in the microwave. |

A fun way to do one at a time is to stir the water rapidly in a small saucepan, so it makes a little whirpool in the middle. Softly drop your egg in, and the centrifugal force of the whirlpool keeps it together till it poaches.
Fun for kids to watch. Not so practical for feeding a large group, though. Agree with the poaching pan suggestion. I used to have one that did 6 at a time--it was very easy. |
| I just got silicone poach pods (from amazon)... no whirling the water, no vinegar, no messy pan. love them. actually makes me want to have poached eggs on toast on a weekday. |
| Put about 3 TA white vinegar in the poaching water, it causes all the white to stay around the eggs a d makes perfect poached eggs |

| I use my large stainless steel frying pan w/straight sides, put a small amount of water in the bottom and boil. I spray ramekins with pam and put the eggs in there, place ramekins in the frying pan. You can do a lot at once and I use the ramekins for other things, so I minimize having one use kitchen tools. |
