How to peel hardboiled eggs without them disintegrating

I have been tasked with making deviled eggs for a memorial service. For the life of me, I cannot peel hardboiled eggs...the whites always come apart. Help!!

Do it under running water and be gentle.

I think you're supposed to peel them under cold running water. At least that's what I do and I'm pretty nifty at keeping the whites intact

Let them cool down completely first. You can use cold water. Tap them on a hard edge gently until it cracks a bit and use your nails to guide the shell off.

Use stale eggs. Fresh eggs are difficult to peel.

Cut them!

Use a sharp, serrated knife.

Use a spoon to scoop out the egg halves.

+1, sounds gross but it's the best trick.

Be sure to start with fresh eggs. Older eggs can be more difficult to peel cleanly. Also, don't overcook the eggs because that also makes them harder to peel. I've found the best way to cook hard boiled eggs is to start them in a pan of cold water. Bring to the boil, then cover the pan and turn off the heat. Let it sit for 15 minutes. Then put the eggs in a bowl of ice water to cool them down quickly. This way you get perfectly cooked, tender, non-rubbery eggs with no greenish ring around the yolk. And they will be easy to peel!

Yes, a bowl of ice water immediately after boiling "shocks" them and the membranes separate, making it easier.

Put eggs in a saucepan in cold water.
Do not cover the saucepan
Bring water to a rolling boil
Remove from heat, cover, let sit for 12 minutes.
Put the eggs in cold water.

They should peel fine. But for extra easy peeling crack each one and place it back in the cold water. The water will get between the egg and the shell. Peel those eggs while you boil the next batch.

BTW if you start to get stressed because it seems like you have to boil a whole bunch go to Harris Teeters... they have hard boiled eggs already peeled.

I heard baking soda in the boiling water works. Haven't tried it though.
