I have high cholesterol and dr wants to put me on meds but has agreed to let me try diet and exercise for 6 months to see if that will help. My wife and I are not very good cooks so the easier the better!
I've done a lot of research about the type of foods, but would love some meal planning suggestions. It's going to be hard to eat fish, veggies. etc. but I would rather do that as opposed to going on meds for the rest of my life (I'm 40). Thanks for any meal planning ideas! |

This is an easy recipe to make: Salsa Chicken--http://www.food.com/recipe/baked-salsa-chicken-breast-33843 Serve with a whole grain Spanish rice like this http://www.mahatmarice.com/en-us/recipes/548/WholeGrainSpanishRice.aspx and a vegetable of choice.
I just made this and it turned out great: Poached salmon--http://allrecipes.com/recipe/poached-salmon-ii/ [note instead of 1/2 cup wine and 1/2 cup water, I used 1/3 cup water, 1/3 cup low sodium chicken broth and 1/3 cup lemon juice. I also added a dash of dried basil with the dried parsley] We served with baked potatoes made by microwaving for 6-8 minutes, then baking for an additional 20-25 minutes. And steamed broccoli made by putting broccoli florets into a dish, putting 1/2" or so of water in the bottom of a microwave container with a non-airtight lid and then microwaving for 2 minutes. Take out and rinse with cold water to stop the cooking. I sometimes add a dash of Mrs. Dash's salt free spices (like Garlic & Herb or Italian Seasonings) This vegetarian dish can be served as an entree if you want and works well with Basmati rice: http://www.foodandwine.com/recipes/cauliflower-potato-and-pea-curry |

Just remember that dietary cholesterol does not increase actually cholesterol levels.
Grass fed organic butter for cooking and olive oil for dressing and dipping are best. Used sparingly. |
