low-carb meals that are freezer friendly?

Am planning to use some vacation time to stock my new freezer with meals for busy weeknights. My usual go-to meals for freezing are very carb heavy (pasta dishes, etc.). Any suggestions for lower carb meals that freeze well? So far I've thought of a few soup and chili recipes, but that's about it. TIA!

This maybe isn't quite what you're looking for, but I freeze a lot of meat in whatever marinade I've mixed up. I then either dump it frozen into the slow cooker in some cases, or just thaw it in the fridge and quickly grill it for dinner. If you're careful not to use sugary marinades -- I usually make my own so I can control the ingredients -- all you need are some non-starchy veggies on the side for a low carb meal.

I love stewed tomatoes and okra and it freezes wonderfully. You can eat it over rice or quinoa or whatever grain you like. Chop up 3-4 cloves of garlic and a Vidalia (or sweet) onion and a fresh jalapeno and let them sweat in a pan with some oil and butter. Meanwhile, chop up 5-6 fresh tomatoes and a pound of okra (into slices) and dump that all into the pan. If it looks like it needs some more "juice" you can splash in some tomato juice or tomato sauce. Add salt and pepper to taste and let it simmer away for 30-40 minutes or until the vegetables are all tender and it's slightly thickened. Freeze it in individual portions in freezer bags and then just thaw and reheat when ready for them.

It's a little better for fall or winter but beef stew is great frozen and thawed.

Make a marinara with our without meat and serve over spaghetti squash (I stick the squash in the microwave before work -- whole but with lots of fork holes to prevent explosion -- and microwave for 5-8min and then leave to sit so it's cool and ready by dinnertime).

Turkey burgers (freeze cooked our uncooked and either reheat or broil after letting thaw during day)
