Arroz con pollo in slow cooker - 8 hours and rice still hard

There was plenty of liquid. Followed recipe perfectly, which said to stir rice in with onions in a skillet "to coat," then add to crock pot, then add the liquid to crock pot. Cook for 6-8 hours. I am on hour 8 and rice is still hard. This happened when I made it last year but I used lomg white rice and figured this time I would try basmati rice since it cooks so much faster regularly.

I'm thinking I just need a new recipe, but this came from a slow cooker book.

The recipe should have told you to add the liquid to the sauted rice while still in the pot and bring to a good boil for five minutes before adding to the slow cooker. If your slow cooker never gets above a simmer on the low setting, the rice will never reach the boiling point and thus never start cooking. The recipe might have been tested with a cooker that runs hotter than yours.

Do you know that your crock pot gets hot? I had similar problems a couple of times with an old crockpot. Replaced the crock pot and the same recipes worked. The pot was getting warm and not hot.

the only luck I've had with rice in a crock pot using parboiled rice (Uncle Ben's).
