Right now I have down:

Steak for the grill

Haven't planned out the full week yet, but a few ideas:

Risotto with Italian sausage and sugar snap peas
Salad with roasted beets and crumbled feta with French bread
Stir fry with broccoli and mushrooms

Turkey burgers with beans, corn, salsa mixed in; corn in the cob and salad

Grilled chicken and veggies

Leftover chicken for quesadillas with pepper jack cheese and peach salsa

Meatball pizza and salad

does he digest it well? we find that when we feed lots of corn, it doesn't get digested and we see it again about 24 hours later.

lime/cilantro chicken on grill w/ corn on the cob and baked beans

leftover chicken w/ salad tonight

sausage w/ grilled cabbage ( w/ lime cilantro dressing leftover from chicken )

chicken enchiladas ( I made a lot of chicken on Sunday! )

turkey burgers w/ avocado and bean salad

take out or dinner at the pool

Last night: Chicken w/lemons & olives, salad, baguette (recipe in the New Parents Meal thread)
Tonight: Grilled flank steak w/roasted potatoes & salad
Tomorrow: Peanut-sesame noodles (one-dish meal, includes red peppers)
Wednesday: Hamburgers on the grill, french fries, broccoli
Thursday: Grilled salmon w/rice and sauteed zucchini

Chicken and veg stir fry

I am in the midst of a fridge/cupboard clean-out so I'm trying to use up all the stuff I have on hand.

Tonight: spinach lasagna

This week:
Mushroom quiche
Indian spiced chick peas with brown rice
A quinoa dish yet to be determined

We are vegetarian.

Chicken scallopine (thin sliced chicken breasts sauteed with garlic, white wine or lemon juice, chicken stock, herbs)

Stirfried kale and white beans in olive oil and garlic

Pasta with red sauce, chicken sausage and bell peppers.

Last night - kidney beans, whole wheat pasta, vegetarian beef crumbles and tomatoes. And mozzarella cheese. So good and filled with protein and fiber!

Tonight - Fake chikn fajitas with green bell peppers and onions

Tomorrow - Homemade cheese pizza with onions, bell peppers, mushrooms and olives

That is about all I have figured out right now!

Tuesday- Fajittas, retried beans, Spanish rice
Wednesday- hamburgers and French fries, corn on the cob, sliced tomatoes
Thursday- Chicken Stir Fry over Rice
Friday- order Pizza
Saturday- something on the grill
Sunday- We always go out for a big meal after church. Supper is leftovers if anyone is hungry.
