The rain changed my plans for grilling a pork tenderloin outside today and I went for a quick rub that I could roast in the oven. All seemed to be going well until, when I went to slice the pork, I tasted the crust and it seemed awfully bitter to me. That's when I remembered that I forgot the brown sugar. Here are the ingredients:
2 tablespoons chili powder 1 tablespoon Adobo seasoning (I used Penzey's) 1 teaspoon ground cumin 1 teaspoon packed dark brown sugar 1/8 teaspoon ground cinnamon 2 tablespoons Extra Virgin Olive Oil and a link to the recipe: http://allrecipes.com/recipe/roast-adobo-pork-loin/ Fortunately, I already fed the kids and DH has a work dinner, so I am the only one who had to deal with this mess. Any idea what I might be able to do to recover it? I hate the idea of throwing away food, but it is pretty marginal. TIA! |
| Can you cut it up and sauté it in a little broth? And then maybe throw it over some noodles? |

Can you wash the outside? At least get a little off?
Then I wonder - probably wont work - but what if you re browned it, or broiled it, with only sugar on it? And if that fails, cut it up! |

Pork chops actually taste really good with some tang, like w/Italian salad dressing.
Do you have some sort of vinegar based salad dressing you would use as a glaze on it? Or since you used an adobo based rub, just serve it with some bbq sauce. |
| I would probably brush it with some dark molasses and put it back in to heat just enough for the molasses to melt a little, then let it rest so that the flavors have a chance to meld. |
