What do you do for lunch on the weekends if not going out?

I'd like to do something new and interesting - I was on a roll with pioneer woman's baked sandwiches (make in advance, wrap in foil and freeze, then bake the day needed), but am tired of those.

For the kids?
--English muffin or bagel pizzas
--quesadillas with ham & apple slices

For grown-ups, now that it's hot, I'm all about the salads and cold soups
--chopped salads
--black bean & corn salads
--gazpacho
--bruschetta

Something quick, as we always seem to be running out of the door, or preparing a big dinner with friends (sushi party tonight!). So at lunchtime it's frozen pizza with salad, or hummus and pita, or leftovers. Always fruit for dessert.

I must say, nothing very interesting. Kale salads in the summer, tomato soup and grilled cheese in the winter.
I'd make gazpacho if I've gone to the farmers market that morning.

Pan bagnat is fun for picnics.

what is this weekend lunch of which you speak?

We tend to eat breakfast on the later side on weekends, so DH and I generally don't eat lunch. We will sometimes grab a mid-afternoon snack. DH's will be pringles or pretzels; mine will be an apple or banana with peanut butter.

DD does eat lunch, but nothing fancy. Generally a pb&j, some fruit, a yogurt. Unless we had pizza on Friday night, in which case she'll eat leftovers.

This is what we do. I cook supper every night. I'm not making lunch as well. Everyone just grabs whatever they can find. Most of the time it's a sandwich or something they can throw in the microwave.

DH snacks rather than eating a meal.

DD normally gets p.b. with crackers or else some organic turkey or ham. Cheese or yogurt since she doesn't drink milk. Some kind of fruit and/or veggie or both.

I'll eat leftovers. Sometimes make a quick salad. As a s/o to the thread on weird food things that you like, I love Morningstar's Buffalo Chik'n Nuggets. I usually keep a box in the freezer and have some for Saturday or Sunday lunch as my own little splurge.

Eggs are a weekend brunch staple, you can do them so many different ways it never gets boring.
