I made a ton of baked empanadas right before my first was born. They were fantastic to throw into the toaster oven to reheat as needed (only take 10 min) and easy to eat while nursing. I fill them with all kinds of different things - veggies, beans and cheese, shredded chicken, eggs.
My first is now 12 and they’ve become a lunchbox staple at my house. I think that first batch was completely from scratch but now I cheat by buying rounds at the Latino market. Keep jarred salsa on hand and you’ll always have a quick healthy meal. |
