My current favorite is rice crispy treats. Takes 5 minutes to make and we never have leftovers.
I used to make cold sesame soba noodles with vegetables, but then my kid became allergic to sesame. Now i make yet another pasta salad. In summer, watermelon and strawberry salad with basil and lime dressing. Recipe from Afro - Vegan cookbook. |

I like rice krispy treats, but some of the picky adult eaters might find it too sweet! I think rice krispy treats will hold up and they are a summertime classic. |

I bring a "salad" of halved cherry tomatoes, corn kernels, diced red onion, diced avocado and black beans, dressed in evoo, lime juice, s/p and cilantro. It can be eaten as a side or as an app with tortilla chips.
To the watermelon, mint feta salad posters, I love the idea of this combo, but doesn't the very watery watermelon start to dissolve the feta so that the whole thing looks milky? Do you just toss it together right before serving? |
