I like it in soups with a tomato base (but not too much-otherwise it takes over).
I like to make a salad where I cook the quinoa in broth then add to it kalamata olives, feta, a little bit of basil, and halved cherry tomatoes. I dress it with olive oil, red wine vinegar, salt and pepper. Usually I make up a big batch minus the dressing and then eat it over the course of the week for lunch. (add dressing before eating) |
Apparently not sensitive enough to figure out what couples well with quinoa. |

| A previous poster mentioned mixing it with salsa--I actually cook it with salsa. I toss in a half cup of salsa with the water that it cooks in. It infuses the quinoa with a nice taste (my family likes it with Green Mountain Gringo's Medium salsa the best). |
| Definitely helps to cook it in broth. Either vegetable or chicken works well. |

I add diced tomatoes, cucumber, olives, green onions, fresh dill, feta cheese, lemon juice, olive oil. and salt and pepper to taste. Greek-style salad--yummy and filling! Or add onion, tomato, corn, a little sauteed diced jalepeno, avocado, lime juice, queso blanco, cilantro, and olive oil--a Mexican-style version.
You can use quinoa as a replacement for pasta in any pasta salad recipe, basically. |
