One pound elbows
One quarter cup each: sharp cheddar, mild cheddar, Monterey Jack and muenster
8 oz Velveeta
2 eggs beaten
1/2 cup half and half
Stick of butter
Salt and pepper to taste

Boil elbows, once soft drain and melt stick of butter to coat macaroni
Mix in cubed velveeta to melt as well
Mix cheeses and stir into noodles, keeping 1/4 cup for topping
Top with remaining cheese and dot with more butter
Place in large lasagna dish, cook 40 minutes covered at 350
Then uncovered 10 minutes to brown

Are you giving her stimulants? Of course that is the problem. A common complaint of parents of kids on stimulants is that they won't eat and are super skinny. Studies also show that their growth is affected and kids on stimulants are shorter than other kids. If not on stimulants, I would still check to see if reduced appetite is a side-effect. It may take more than a weekend for the appetite to increase she's developed circadian patterns of eating possibly. If she is a picky eater, you can address some of that with a specialist or just go with it and offer her what she likes. But if her appetite is suppressed she will eat less even of foods she likes. Try dropping the meds, maybe this summer, and see. The other problem I see is giving her Ensure or whatever the nutrition drink is you're giving her. If her body's nutritional needs are being met, she won't have an appetite. IT is a vicious cycle I have seen in babies and the elderly too where they are fed formula or nutrition shakes and then everyone wonders why they won't eat full meals. I understand the reason to give the shake but I think that is supplanting other foods so you have to choose which one you're more comfortable with. I recommend dropping both this summer and seeing over the course of 3 months whether you can get her back to regular foods more. Try not to talk about food too much so there is no issue with power struggles.

Just read my previous post. I didn't mean for my tone to come off as judging or overly certain of what I wrote. Was not intended. Let me rephrase as a suggestion to consider that stimulants could be causing appetite loss as they are known to do.
