OK, so what are we cooking on this snow day?

A casserole with Italian sausage, eggplant, zucchini, tomatoes, basil and some other things. Had some eggplant and zucchini left over so I made ratatouille as well. Mixed that with some penne pasta and that was lunch - my son loves it!

I made hamburger buns yesterday so we can have pulled pork tonight. DH smoked it a few weeks ago and it was in the freezer. He made BBQ sauce for it this am. We are going to have roasted sweet potatoes with it. DD and I made PB and chocolate chip cookies this am.

spanikopita rolls--spinach & ricotta rolled up in puff pastry.

And cookies in the shapes of letters with the left over pastry.

Overnight baked french toast this morning, leftover chowder for lunch and Provencal short ribs with olives & herbs.
