I don't think any of the people on these show are supposed to appear likeable. That would make shows like this boring. No matter how these shows are edited the people appearing on them volunteer (or are paid) to do so. Not the nicest sociological comment on American culture, but I guess it is what it is.

What kind of mother would say to her daughter "I'm not going to tell her she's beautiful if she's overweight!". That is disgusting !!!!!!!!!!!!! Shame on you Caroline Manzo !!!!!!!!!!!!!!
