How about a Peppered Mushroom & Stilton Pie? PM me back if you'd like a recipe. You could substitute the stilton with a milder blue cheese, but it's fantastic with it.

It would be great to know what dish you go with, and whether she liked it.

Try to provide some kind of protein - black bean burger, grilled cheese, portobello with a slice of cheese grilled on top of it, etc. You can grill veggies on skewers with pieces of Indian paneer (cheese) alternated with the veggies (you can google recipes for this). Whole Foods sells paneer. Good luck!!
