Cook-out with ONE vegetarian... ideas?

I'm usually that one vegetarian at the cook-out, lol. Sometimes people bust out a frozen veggie burger box they have had in the freezer forever, sometimes people get super worried and call me to ask what I will eat, and other people just wing it! I always feel really bad, since I know the host has to go to extra trouble to make sure I get food. I do eat a lot of sides, and I love grilled corn on the cob (my family just puts the entire thing on the grill, wrapped in foil). One time someone sprayed nonstick spray on foil and made a little tray, and placed the veggie burger on that to cook it so it didn't touch the other meaty foods. I also don't like the Boca Burgers, I usually eat spicy black bean burgers made at home or gardenburger's veggie blend burger.

Grilled pizza is tasty for everyone, but takes a lot of work!

And, I'm also that one vegetarian that doesn't like grilled portabello mushrooms. I know, I know! But I've been a veg. my entire life and have eaten a bazillion of these. But I do like mushrooms on my burger so go figure, lol.

Man I am craving grilled peaches and grilled pineapples right now! Op you are very nice to think this out, but honestly anything non-meat would be fine, and thoughtful! (my in-laws called me once and demanded I bring my own food to eat, since they just don't deal with vegetarians, lol)

Former vegetarian here who still loves Portobello Burgers. This recipe is fantastic (even my meat-loving husband likes this).

Just a thought. . .you probably don't want to grill veggies and meat on the same grill. My vegetarian friends definitely prefer that I don't

morningstar brand veggie burgers are good, and there are different kinds (mushroom, black bean, etc.). She can also eat vegetarian side dishes like pasta salad, grilled veggies, salad, and so forth. But you will signal that you want her to feel welcome and included if you give her a veggie entree like a veg burger - very nice of you!

OP,

I'm sure she's eaten around meat before. What side dishes will there be? Enough for a meal for her, I bet! Potato salad, couscous salad, green salad, deviled eggs ... a few ideas!

Ridiculous exception. If you are so picky a vegetarian that you ask the host to have two grills, you are way too entitled. Bring your own food. The presumptuousness is astonishing. Such poor manners.

There is not reason for two grills! Just use a piece of aluminum foil. That's hardly a big deal, and it will keep the meat juices off her food.

Halloumi cheese is also a good choice - doesn't melt. We like it on skewers with mushrooms, zucchini and tomatoes.

That's true, she can. But it is so easy, and thoughtful, to just throw a portobello on the grill--I don't know a veg who won't eat one, although I am sure this is one out there somewhere.


Me. I eat pretty much any and all veggies, but not mushrooms, portabella or otherwise.

I'm not a vegetarian, but many of my friends are, and, frankly this attitude is both common and rude. This person is a guest in your home. PP suggests potato chips and carrot sticks while the rest of the guests have a fairly substantial entree? Please. It isn't hard to accommodate a vegetarian, and this thread is full of great ideas for substantial vegetarian options. OP, whatever you choose, please don't expect your guest to eat chips and carrot sticks while everyone else eats dinner.
