Our family has always menus planned by the Bride's wedding planner/catering team. We approve the final menu, naturally.

If they can’t have soda or wine, then surely they know how to order themselves a drink.

There’s so much food at the weddings I’ve been to that I’m sure you could find something.

I would only accommodate very immediate family and only if it did not meal the entire reception is having grilled chicken salad no dressing , ice water and melon for dessert (small bowl)

We recently planned catering for a large event of this type. We tried our best. We gave lots of variety, set it up where you could mix and match. There were plenty of options if you were vegetarian or gluten free and so on and so forth. What we could not do is deal with vegetarians who don’t like risotto or low carb people who don’t like salmon, etc. It’s one meal and some people are impossible to please.
