OP hasn’t checked the thread since this morning because she worked today, then went to the gym, cooked dinner and enjoyed hang out time with her family. We will drive DS back to school.

Thank you all for these terrific ideas! I plan to make pumpkin muffins and baked ziti divided into individual portion sized take out tins. I will bank the other ideas for the future.

I could do cookies, but was thinking maybe protein muffins or an actual meal like lasagna might be more enjoyable? DS plays a spring sport if that matters (so I’m thinking a pre-practice snack?).

One of my sons loves meatloaf and I would mix the ingredients and then freeze the meat loaf in large cupcake pan and I did the same with Chili. I packed in a Yeti cooler with a layer of dry ice on bottom with cardboard on top, packed food, cardboard and layer of dry ice on top. Plus gloves and repeated written instructions on dealing with dry ice.

I packed enough for his two roommates as well.

What are the chances of him actually eating these things at school? Be realistic. He's going to hit the cafeteria for fast casual. Ask him what he wants and if he would eat it. That's what I do with our college DD who lives in an apartment with a full kitchen. She'll be honest with me. No, I probably won't eat that. What she wanted was canned soup, noodles, ramen, and Spaghetti-Os. Spaghetti-Os? Seriously? Yeah, mom. I'm busy and I want dinner ready in five minutes. So I bought her the bulk pack and she was super stoked.
