Sorry- shallots, green onions, red onions, I still smell it all over your breath.
I think the only solution is to caramelize them a bit. I know that doesn't vibe with the raw guacamole theme, but everything can be improved!


That sounds so gross and definitely doesn't vibe.


Caramelized onion sounds gross to you? They are a delicacy if done right.


I love them in other things, but they sound disgusting in guacamole. They bring a more moist, slimy texture and sweetness.

I don't add lime juice. It tastes better BUT it oxidizes quickly.

What kind of monster puts caramelized onions in GUACAMOLE?? Talk about 2 flavors that do not go well together in the slightest.

I tend to agree with this, so I typically use onion sparingly or in cooked dishes.

Slice onions very finely, soak in ice water, drain ice water, continue chopping

I am now wondering if it has to be ice water, but that’s what I use

Very common in many countries south of here, though for the most part just mashed up with salt and pepper and lime juice is the standard way, and caramelized onions are thrown on top, rather than mixed in, when making tacos.

NO, they are pickled red onions on the top. Not caramelized onions. This isn’t a french soup.
