The hardest part is finding good avocados. So many these days are stringy with a weird aftertaste. Otherwise, just garlic, salt and lime juice for me. I don’t like chunks of anything else. |

If you want something very fancy and cute - this is my DD's party recipe -
Mashed avocados Finely chopped tomatoes (remove seeds) Finely chopped shallots and two cloves of garlic, and one stalk of green onions or chives. finely chopped. Finely chopped jalapeno (deseeded) and coriander/cilantro Lime juice Salt and black salt (from Indian store) A pinch or two of roasted, ground cumin Mix all, adjust seasoning, serve on the halved intact avocado skin shells, sprinkle some pomegranate seeds, a hint of lime zest. Arrange the stuffed skins around a fiesta patterned platter and put a bowl of extra guac in the middle. It is lovely. Another variation is to roast poblano peppers, remove skin, deseed, chop and include. Ufff, soooo good. |
Finely Chop red onion, salt and top with the lime juice. Let sit for a few minutes before mixing in |

Sorry- shallots, green onions, red onions, I still smell it all over your breath. I think the only solution is to caramelize them a bit. I know that doesn't vibe with the raw guacamole theme, but everything can be improved! |

How about simply adding fresh guacamole ingredients to a guacamole recipe? Tomatoes I’ll grant are controversial. Bacon bits are a shit suggestion. Sorry, but shit. |

I love tomato in my guac. I would even consider corn in there (and bacon!). Avocados are so pesky and expensive that I love to stretch out guacamole with a lot of other vegetables so that it's a meal on its own basically. With some toast or chips or toasted baguette. |
If you're worried about the raw onion taste what you could do is chop the onion and juice the limes first and then let the onion basically marinate in the lime juice. It will mellow the onion flavor a bit.
I personally prefer a finely minced shallot in my guac. |
