Monday: steaks and burgers on the grill
Tuesday: frittata with potatoes, bacon and onion
Wednesday: college son home has asked for breakfast for dinner, so pancakes, sausage and eggs
Thursday: red curry with chicken, shrimp, green beans
Friday: takeout since I won't be home

Wednesday: DS (12) is making us Chicken Milanesa with an arugula salad. Will see how that turns out!
Thursday: Salmon with a Dijon walnut sauce and peas
Friday: Attempting to make this homemade pea ravioli recipe

Work dinner, teens are fending for themselves
Planning to grill something tomorrow night, but no idea what. Maybe salmon.

Waiting for the rifs tomorrow, so it's been fast food and chicken tenders the whole week. We are in a rough patch.

Tonight was what I call pasta bake lol. It’s like baked ziti cept I never have ziti. I it’s just pasta, Raos sauce, rotisserie chicken mixed together, mozzarella cheese on top and broiled for a couple mins.
20 min dinner. Made enough for leftovers tomorrow.
Last night was pesto marinated salmon, potatoes ( microwaved) and peas/corn. Also a 20 min dinner.

The summer makes it harder to plan but I made

Chicken enchilada casserole (basically enchiladas but without all the rolling)
Mac n cheese and chicken nuggets for kids, leftover enchiladas for adults
Breakfast for dinner (waffles, milk bacon and fruit)
Hodgepodge (yogurt, protein muffins, plain pasta fruit and leftovers for everyone else, turkey sandwich for me)
Not sure what tomorrow brings but we will eat out at least once this weekend. I am really over cooking if you can’t tell

We usually cook nice dinners but this summer has been rough - this is not normal for us, but feels like the best we can do at the moment. Lots of work stress, a busy sports season for teen, and a health issue going on

Sun - BLTs and carrots
M - frozen turkey burgers with fresh tomatoes and lettuce, tots, corn on the cob
Tu - Costco fresh salmon - grilled the first night with zucchini and a grilled potatoes
W - salmon leftovers in a bowl with rice and edamame and leftover grilled zucchini- store bought japanese spicy mayo
Th - chicken nuggets and ?? maybe frozen perogies and whatever CSA veggies are left - probably cucumber and tomato salad
F and Sat - likely takeout pizza
