Pan-fried salmon with lemon slices and a simple potato salad. This salad consists of cooled potatoes, sliced onion, salt, vinegar, and a tiny bit of oil.

You really are a bad mom- the meatballs go in the toaster over with the nuggets, and the broccoli steams in the microwave

Second that. I bought frozen Ikea meatballs, and we ate them on the weekend. And I can cook, heck, can I cook. Do I want to come in after work 100 degrees after going to the grocery, running a few errands, and stand over a hot stove? No.

Do I want to eat sauerkraut and meat in July at 100F? No. I want to eat it in December and January. Do you all not walk anywhere? Water your lawn? Take your kids in and out to activities. Are you telling me you feel like a steaming stew after being in this heat or that you actually never go out?

Salad!
Yesterday’s grilled stuff cold today!
Popsicles!
Anything frozen.

How did you grill and stuff your cold? Or did you grill your cold? For how long? Does it work for allergies, too? What kind of stuffing are we talking about? Ha, ha!

I don't have a problem turning on the oven, or even cooking over the stove. I do want lighter ingredients though. So I'll still roast vegetables and things like that. I just don't want a heavy chili or creamy pasta.

This. I never really understood the issue.

I have AC too, but cooking something lengthy on the stove or in the oven on a very hot summer day puts extra unnecessary demand on my AC system and the electric grid as a whole. I also don't really like cooking over a hot stove or near a hot oven when temps are scorching outside. I keep my roasts and braises for cooler weather, and stick to outdoor cooking, salads, and stuff that doesn't take more than ~30 minutes on the stove.

This! It also keeps life and menus seasonal which is nice. All the people pissed that Costco has Halloween decorations should appreciate keeping the oven off in summer.

We do BLTs.

Cucumbers, pre-cooked chicken from the fridge, salad?

I made gazpacho a few weeks ago but not really good for kids.

I feel practically no hunger so it’s really difficult to be motivated to cook.

+1

I don't understand OP's contrived problem. Just pretend it is December and cook inside...

Maybe you don’t live an old house…

We do, and we have a/c. But when it is over 90 out, the A/c will run continuously and the coolest the house will get is 75. The oven will add to that

I agree with PPs who said chicken salad and tuna salad, on a nice croissant. A few chips.

I would also consider BLT or my latest favorite, a slice of rare roast beef, a slice of roasted turkey breast, a slice of colby jack cheese, a slice of bacon, on multi grain bread with some mayo and honey mustard.

A fruit side of watermelon, grapes and cantaloupe chunks, and some iced tea.

Ribs - instant pot then finish in oven.

But also lots of salad and sandwich meals or mezze.

NP

I’m not inside all day. Truthfully the weather makes me a bit lazy too. I eat lighter so not overwhelmed when outside and also not having to be in kitchen as much. Seasonal eating and all.
