I do breakfast quesadillas with corn tortillas, veggie bacon, cheese and fried eggs. <5 min

We have a concept of "cold plate" it can be charcuterie but can also be cold leftovers.

Sometimes frozen peas, dips, crackers. Whatever we have roaming around in the fridge. Kids think it's a special treat.

This only works if you have food in the fridge though...

Fried Spam, egg and rice. Mix equal parts soy sauce with a little water and a little sugar to taste. Spoon a little on top. Comfort food.

Usually my “I can’t even” meals are because I need to grocery shop and I have to make do with what’s on hand. My meals for those nights are:
Pasta with rao sauce
Black beans and rice and some cooked up chicken tenderloins
Quesadillas
Frozen pizza

Boxed mac and cheese with broccoli - throw the broccoli in the pot when the pasta is almost done

Chicken nuggets or tenders with bagged grocery store salad kit

Sheet pan dinners - throw on some drumsticks + small potatoes and roast, then throw in some broccoli

Chicken thighs marinated in teriyaki sauce on top of rice (can use frozen rice)

Cheese Quesadillas - made in the toaster oven. Add in a few spoon fulls of salsa if I have it.

When trying to make a bit more effort - saute up some spinach and put that into the quesadillas and cook them in a frying pan so they get crispy.

Boiled pasta with jarred sauce. If I want to add a veggie, throw in some frozen spinach as the pasta is boiling and then drain and throw sauce and cheese on top.

-Jarred sauce, frozen Italian meatballs (TJ or Costco), spaghetti and some kind of easy vegetable - steamed broccoli, frozen mixed vegetables, etc.

-Steamed rice (I have a rice cooker), Orange chicken (TJ or Costco) and stir fried vegetables

-Beef and broccoli over steamed rice

-rotisserie chicken, sheet pan vegetables

-Salad with a grilled meat

-make your own burritos (black beans, leftover rice, cheese, lettuce, tomato, etc.)

-Taco salad

-quesadillas

-wonton noodle soup (frozen wontons, instant noodles, chicken broth and whatever vegetable I have that would be good - usually leafy greens

Pupusas made with equal parts water and masa. Fill with canned refried beans and cheese and fry in a little oil. Ready in 20 minutes. Serve with some rice, veggies and/or salad.

I always keep a jar of Costco pesto in the fridge (or Gotham Greens pesto when it is on sale as it is so good).

Our go to easy meal is to cook pasta and throw in a bag of broccoli (the precut and washed florets) about 2-3 min before the pasta is done. Drain and toss cooked pasta and broccoli in some pesto, add cubed mozzarella if you have some.

If I have defrosted chicken, and enough time and energy to cut it up into strips, I’ll toss those in pesto and roast on a sheet pan with broccoli and tomatoes for about 20 minutes.

This one doesnt involve pesto- it is a mac and cheese variant. Heat a tablespoon-ish of evoo in a pot and add 1 cup of orzo and toast for a minute, then add a little shy of 2 cups of chicken broth and 1/2 to 1 cups frozen peas ans bring to a boil, then simmer covered for 15-20 min. There should be a little liquid left but nothing to drain, and Stir in 1/2 cup shredded parmesan cheese and it becomes a lovely cheesy sauce.

Mexican bowls - rice, leftover or precooked chicken, a can of black or pinto beans, cheese, avocado and salsa.

Steak and baked sweet potatoes - there’s no prep and minimal cleanup.

Quesadillas for sure. I had 3 younger than 2 (twins) and this was my go to and still their favorite meal as teens.

Roast chicken (surprisingly easy, doesn’t work for me with 3 teen boys - not enough food - but for a toddler and parents =yes)

I also did a lot of boiling chicken breast and then stredding. For adults I used in chicken salad or a quick marinara over pasta. For toddler just plain.

Also browned Turkey meat with pasta sauce.

And Amy’s max and cheese.


If you are use to better food pls keep in mind this is a phase of life and as you kids grow and are more independent you can good great meals again. For now, quick and fast is acceptable.
