Peanut butter noodles or sesame noodles - make ahead, refrigerate, eat cold for breakfast
Hard boiled eggs - I make a dozen on the weekend and refrigerate them all together. Peel, cut in half, salt, serve with a couple of pickles. Veggie frittata - make in muffin cups or in a pie tin. Eat cold or microwave for 15-20 seconds. Ham and cheese croissant, cold or heated in the oven for a few minutes until the cheese starts to melt. |
I just made muffin tin eggs for the first time. I’m a vegetarian and put in broccoli, spinach, pant based pepperoni, and a strong cheddar.
They turned out really good. They were supposed to be for me to take to work because I eat breakfast at work but my spouse and child ate some so now I need to make more lol. Now I know they’re good I’ll make a dozen. |
Breakfast burritos are easy to make ahead of time and freeze. |
I like eggs and bacon but that is it for breakfast foods, so I eat the same things for breakfast I would eat for lunch or dinner.
Salad, baked potatoes, leftover pizza, pasta, a crab cake, chicken nuggets, sushi, tostada, chili, enchilada, moussaka, hummus and vegetables, cheese and crackers. All of those are quick,or can be premade and frozen. |
Probably wouldn’t work for most kids, but I’m currently into eating salads for breakfast. Usually kale, apple, nuts and maybe some cheese |

One of my kids eats pork dumplings for breakfast - the frozen kind you can boil. Can't say that its healthy but it might be slighter healthier than his other breakfast obsession, which is ramen noodles. |
I love leftovers for breakfast - rice and salmon with cucumbers is a favorite. I also love incorporating leftovers into a more traditional breakfast item, like flaking leftover salmon or using roasted veggies in scrambled eggs.
Sometimes I toast a piece of pumpernickel bread and spread a soft cheese on top and add a slice of tomato (ebtb seasoning is good on this). Hummus and cucumbers on pita is a breakfast I like, too. Or toast with plain greek yogurt and chickpeas (I like to drizzle a spicy oil on this like evoo with harissa). Lots of eggs and avocados feature in my breakfasts, too. I basically only eat savory breakfasts. |
You really could eat anything you want for breakfast. Meaning, you could eat what you think of as dinner or lunch foods for breakfast and it would be fine. |
