Vegetarian dinner

I’m going to make the pizza beans next week, sound delicious and I think my kid will like them too. ( not OP)

Make a mezze spread, you can even make falafel ahead of time and cook it when they come. I'd include pita, hummus, baba ghanouj (many people who don't like eggplant like this), stuffed grape leaves, roasted veggies, feta or halloumi, turkish white bean salad, an olive plate, red pepper walnut dip, etc.

Ina Garten has a recipe for salmon nicoise salad that I make for company dinners and set up buffet style (I usually put each item next to another on one large platter which looks pretty, but with a vegetarian I’d keep the salmon on a separate plate). You could add roasted chickpeas to the platter for those who don’t eat the salmon.

I think this is a great idea. Risotto (not necessarily cabbage, but any kind you like - you could do fresh herbs, lemon, etc) with salad and some springy vegetables would be nice at this time of year when a lot of us are tired of wintry foods. You could also prep it mostly ahead (hold back part of the broth and add it when reheating and finishing cooking).

Epicurious has a recipe for beef green stalk risotto that I love. It has chicken in but I leave that out. It turns a beautiful fuschia color. The trick is to wash the beet leaves really really well for grit, and also use a nice high quality parm to finish it. It’s so delicious.

Please don’t put vegetarian and non-vegetarian items next to each other on the same plate.

I wouldn't serve a meal for guests where my guests couldn't eat the centerpiece. I've served meals to vegans and vegetarians with meat as a side dish. I'm the one who suggested cooking sausages as a side to pizza beans. But I don't think of salmon nicoise salad that way. The salmon is kind of the star.

Falafels are pretty good or if you’re okay with it breakfast for dinner. I always found it easy to get breakfast with my vegetarian friends.
