What to do with ground turkey

Anonymous
I know you said you’ve already been making Turkey meatballs- but these ones are SO good.

Basic recipes is 1/2 cup ricotta, 1/2 shredded parm, 1 egg per, 2 cloves chopped garlic for every 1 lb ground Turkey. Then add in whatever herbs and spice you like. Personally I like to add cumin for the kids (since they don’t like to see green stuff in them). But my fav is to add a lot chopped basil, parsley and mint

Turkey kebabs.

Add minced - onions, ginger, garlic, green chillies, cilantro. Add - turmeric, red chilli powder, black salt, cardamom, black pepper powder, regular salt OR just kebab spice blend.
Add one egg, crumbs from one slice of bread. Mix well. put in fridge for 30 minutes for all the spices to blend well.

Then take a small teaspoon full of mixture and pan fry to taste test. Adjust seasoning and keep testing until you are happy with the taste.

Then shape the mixture into logs with 3/4 inch - 1 inch diameter and lay out on the cookie sheet. Heat oven to 350 F. Bake for 20 minutes until the kebabs are done.

Make Thai style pad gra prao (stir fried meat with basil). It's a street food favorite.

You can also make a Thai style laarb salad for something lighter. Ground turkey will work fine.

You’ve said you make meatballs, but have you made all the different flavours of meatballs? Tried stuffing them with cheese? Turkey piccata meatballs? Asian fusion meatballs? I think there are different enough flavour profiles that you could eat turkey meatballs once a week for 6 months and never get repetitive

We make these: https://www.washingtonpost.com/recipes/algerian-style-meatballs-chickpeas/17175/

They're meatballs, but with a North African flavor. My kids love them, too.

Martha Stewart's Turkey Burgers: ground turkey (preferably breast meat), shredded gruyere cheese, mustard, one or two garlic cloves, black pepper, and chopped scallions. Mix, fry up, and enjoy.

Modern Proper has interesting meatball recipes that aren’t traditional spins on Italian. Lots of Asian inspiration.

These Ottolenghi meatballs are fantastic. https://www.panningtheglobe.com/turkey-zucchini-meatballs-lemony-yogurt-sauce/

I also use this bulgogi marinade recipe but just book it with the ground turkey. Serve with rice, carrots and cucumbers in rice vinegar, scallions etc: www.bonappetit.com/recipe/bulgogi-recipe
