Salmon for Christmas

I'm the vegetarian above, and we are having:

Spinach-artichoke dip in a bread bowl
Fresh sourdough and crudite
Salmon roasted in parchment with garlic and lemons
Creamy dill-horseradish sauce
Veggie tart (probably squash, onion, gruyere)
Au gratin potatoes
Mashed root veggies (rutabaga, etc)
Roasted Brussels sprouts and/or green beans
Fruit salad
Cookies
Peppermint cheesecake
Mincemeat pie



I would love a good spinach and artichoke dip recipe. I've tried a few and didn't really like them

OP here. I wanted to come back to thank you all again. Salmon was a major success! We ended up getting 2 1.5lb filets from Whole Foods and I baked them with lemon butter and added some herbs before serving. I also took wisdom from the PP who makes salmon every year and served with a creamy dill horseradish sauce, which was a huge hit. Everyone seemed very happy and I think we may have a new Christmas tradition!

I thought your menu sounded wonderful! I was only chiming in to say that while asparagus IS more springy, I've been eating it all winter and I think the quality is fine. Did you keep the asparagus or replace it with Brussels sprouts?

+1 We had asparagus at two different family Christmas gatherings. Love the taste and the pretty green color with the other food.

I had to suffer through some insanely salty ham over the weekend so I'm gonna float this idea next Christmas.

We found lovely asparagus at WF so went with that! Brussels sprouts or another green would have worked too, but I was glad we could get some great asparagus! Bonus is that the creamy horseradish dill sauce also worked well with it!

OP here. Do it! Bonus is that salmon is so easy to bake and goes well with lots of traditional sides. I've already declared we're doing salmon for holidays going forward!
