I rather belatedly decided that I would like to serve salmon for Christmas and I am envisioning one big piece (a side of salmon?) that can serve 8, or ideally 10. Is this the kind of thing you need to order well in advance? Any ideas on where I might be able to pick one up or place a last minute order? I'm in MoCo.

I'm a vegetarian--so no expert at all--but I typically make salmon for Christmas. In my experience, a "side of salmon" typically only feeds about 4 people. I seem to recall reading that a portion of salmon is around 4 ounces.
In your case, I would get two, and roast them both in parchment paper, and then put them on a serving tray side by side. I always just buy it from the fish counter at Whole Foods on Christmas Eve. |

We are getting a side of salmon at Costco. It's not something you can buy in advance unfortunately.
I think a side of salmon will serve 8-10 assuming there are generous side dishes. But check the weights - you probably want one that is at least 2.5-3 lbs. |

Eh, I like something warm and hearty and with good aroma for a celebration- roast, steak, turkey, or the like.

I've got a recipe for goat cheese and sweet potato coulibiac that sounds, and looks, nice. But then I'm a fan of salmon coulibiac. My mom used to make it and cut out the pastry in the shape of a fish. If you're making a salmon risotto, you could make a wild mushroom one. |

OP here. You are all so great, thank you! I called Whole Foods and they confirmed they have 3 lb salmon filets in store and would have them Fri/Sat. I'll also check out Costco.
For others who are planning salmon, I would love to hear about what you're pairing it with. I'm planning: Kale salad with sliced almonds and balsamic Mashed red potatoes Roasted asparagus And we will have stuffing, gravy, and cranberry sauce, even if they stick out against the rest of the menu
