Many STEM curricula are part of liberal arts and sciences.....they require classes in the arts, which include things like history.

Generic arts, history and humanities credits. Typically, nothing that goes deep into current foreign policy.

This thread is about the CCP monitoring and threatening Chinese students studying at American universities.

It isn't American college professors who are threatening Chinese students, putting up threatening messages targeted at them, et cetera. It's the CCP.

NP. The real question is, why does China have this kind of reach in American higher education? Is there anything that these institutions can do to shield Chinese students studying here from this kind of abuse?

Chinese police have no authority to operate in the US. Anyplace that this is happening here in the US, they should be arrested and prosecuted for falsely impersonating law enforcement, along with anything else they've done, like making threats. If they have diplomatic passports they should be expelled.

These students pledge loyalty to the Chinese government; otherwise they wouldn't let them come here.
